Vietnamese Ribs

Hi all. I ran across this recipe in the latest edition of Bon Appetit for Lemongrass Spareribs and thought it would be worth posting. It looks great, and rather NatureBoyesque, if you ask me.[p]1 cup chopped shallots
3/4 cup fish sauce
1/2 cup minced fresh lemongrass
1/2 cup water
9 (yes, nine) cloves garlic (chopped)
2 Tbsp sugar
2 Tbsp chili-garlic sauce
2 racks of pork spareribs[p]Combine marinade ingredients in a large bowl and marinate ribs for about 2 hours, turning frequently. BBQ ribs as usual and boil the leftover marinate, then use it to cover the ribs in the last 25 minutes of cookage. [p]Sounded really good to me. Try it out and let me know what you think.

    That sounds a lot like the Vietnature Country Ribs recipe I posted. A bit more fish sauce and garlic (what's up with the water??) Overall, it sounds like a great recipe. Compare it to the Vietnature recipe. Heavy garlic, lemongrass, and fish sauce really make it happen. You would not believe the carnival in your mouth. I need to try that with spares or babybacks, as I normally do it on country ribs. I was primed to cook this for the eggfest, but am swaying toward a brisket. I wonder what people would rather have? You have my mouth watering. Sounds great.[p]Thanks for posting it.
