Jfol, Slicable to 165 to 180..pullable 195 to 200 or fork twist tender.

Jfol,
Somewheres abouts 190-200. Sometimes I will do a fork test at 185 if the cooking time is already over 2 hours/pound. Sometimes it is pullable at 185. It is almost always very pullable once you get past 190.[p]Have fun. Don't get much better.

Char-Woody,
I did a 5.8 lb pork butt this week that took 23.5 hours to get done. Mostly the dome temp was 250. Even at that a Polder read only 180 and a remote read 176 when I took it off. Basic hunger got the best of me. It seemed to pass the fork test okay. I really expected it to be less that pullable but it in fact pulled with the best of them and was moist and tender. I guess every piece of meat is different.
