Unknown
edited November -0001 in EggHead Forum
Just picked up a Chuck Roast. Should I smoke this the same as a Pork Butt? What temperature should I be looking for 190? How long of a cook at around 220 degrees?

    JShaw,
For the best pot roast you ever had do the following.
    1 3 1/2 pound chuck roast
    2 tbls oil
    1 medium onoin/carrot chopped
    1 rib celery chopped medium
    2 tsp sugar
    1 cup chicken broth
1 cup beef broth both low sodium
    1/4 cup wine
Brown beef on all sides about 8/10 min
remove meat from pot and put in onion, celery, carrot, with 2 cloves garlic minced.sugar and cook till it starts to brown.
Loosen all the goodies from the bottom of the pot and return roast to the pot.
Addd liquid to pot till it comes half way up the roast.
Roast in the egg at 300 and turn every 40 min.
Total time of the cook will be 3 1/2 to 4 hrs.
Cover the pot tightly with lid.[p]
