Sesame/Garlic Chicken
Two 4 pound chickens in the egg at 4 pm - 350 deg. Rubbed down last nite with paste of mashed garlic, black pepper, & sesame & garlic oils (theme & variation on "Smoke 'n Spice"). Injected with sesame/garlic oils, butter, beer & black pepper mix, & put 'em in the fridge overnite. Stuffed em with mushrooms & onions, smeared with oil & garlic/sesame paste, put 'em on chicken sitters over drip pans on fire bricks, polder in the thigh. 4 pounders usually run about 2 hrs. or so this way - will post results. Never did the garlic thing before, but I can tell already that if you don't like garlic, you're gonna have to eat somewhere else tonite...ERIC

Sounds wonderful. The garlic will be nice. Sometimes I like to roast the garlic first before putting under the skin, but either way it is good, and you are in for some serious eatins.[p]Even the stuffing sounds great.
