Dwell in the Shell
Did the lobster tail "dwell in the shell" again this evening. Had huge tails. 2 lb from Chile. They definitely take longer than 5 mins per side because of the bulk, but I have a hard time telling when they are done. I've always used the opaque look to indicate done, but on these it seems to be almost too done. What's the indicator for a lobster tail?[p]MShark

Did lobster tails tonight too. After 5 min I use the thumb method. When I get some resistance the tail is done.

Has anyone done split whole lobsters in the egg, and can perhaps say something about temp. and timing? We've had them on the Weber in the past, wonderful, but with the moisture retaining properties of the BGE that should be about perfect. -- km
