    It's not minutes, but hours per pound. Pork Butt are slow cooked at 250 deg. dome for 1-2 hours per pound. The actual cook time depends on the amount of fat, bone and connective tissue present.

    If you are going to slice the pork you want an internal temp of 165. If you are going to pull it you need to get the internal temp of the meat up to 195. In either case the meat needs to sit for 30 minutes or so.
  • Beef or pork rule of thumb. 1.25 hours per pound at 250. Works every time, Period.
