Prime Rib/Ribeye/Standing Rib Roast?
Comments
-
TNJake,
unless i am wrong the standing rib is primerib with bone in, prime rib is bone out roast and rib eye is the bone out cut into steaks. not 100% for sure.
-
TNJake,
i have done a bunch of standing rib roasts, they are great to do when you can get them cheap like that.

TNJake,
a boneless rib roast.[p]"prime rib" in the vernacular, though i always thought 'prime' meant prime grade. some say that 'prime' is a throwback term, not referring to grade of beef but just to the fact that it's damn good...[p]the meat is the eye of the rib, or ribeye. if you cut it into thick slices, you get rib eye steaks which some call a Delmonico after the restaurant that helped popularize it.[p]if each steak has a bone, it's a bone-in ribeye,

TNJake,
ribeye roast is also called delmonico roast as some butcher shops. with the prime rib, some like the loin end better, i like the chuck end better. all those names are for the same piece of meat, just some still have the bones

fishlessman,[p]So does a bone-in ribeye roast = prime rib?
-
ncegger,
around here a rib roast is a bone in rib eye, its also a prime rib roast. the confusion is that the butchers here will mark them all prime rib even though they could be choice grade. you can also order a prime grade prime rib but will pay dearly for it. the prime rib is from the prime ribs of the cow, the first few are chuck ribs, then the prime, then i believe sirloin. prime at some places refers to which rib on the cow, not the grade of the meat so you need to be careful. choice grade prime rib is good stuff, i would never pay the high prices for a big prime prime rib

fishlessman,[p]Well I'm not sure what I have then, but it looks good. It says it is a Beef Ribeye Roast Bone-in. It is normally $9.99/lb. and it was on sale at $4.99. It is 4.75 lbs. I am planning on rubbing it with EVOO, Salt, and Seasoned Pepper. Then I am going to cook it indirect using a version of Mad Max's prime rib cooking style. Start at 500 degrees and work it down until 350, until internal temp around 130.[p]Sound about right?
