Cordon Bleu

I tried cordon bleu this weekend and was happy with the results. I took chicken breasts, pounded them a bit to flatten them out, then placed a slice of canadian bacon and pieces of provolone slices on each breast, together with thin slices (no seeds) of jalapeno. I then rolled everything up and tied it with butcher string. Then dipped in an egg/milk wash and breaded with flour/corn flour other spices. Refrigerated an hour, then placed indirect at about 200, then opened up vent until it got as high as 350. Everything off the fire after an hour. [p]Declared success. very good. smoke taste good, jalapeno good. Served with a hollandaise and aspergrass.
