Amount Measure Ingredient


3 large potato -- washed and quartered
3 large eggs
1 medium onion -- quartered
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon lemon juice -- optional

peanut oil -- for frying

In food processor process all ingredients til no longer chuncky.
heat oil to 360°F
fry individual latkes till golden brown on both sides.
drain well on paper towel before serving.

NOTES: cinnamon & sugar sprinkled on top & served with apple sauce on the side.
