First cook was GREAT

Did my first cook in my large BGE Sunday. Three racks of baby backs using the 3-1-1 method they came out GREAT. Marrinated with red wine vinegar, sugar , salt , pepper , garlic , hot sauce, for about 3 hours. Then applied Rib Stars rib rub and into the egg at 250 using apple chips indirect . After 3 hours i wrapped them in foil along with a sauce i made with orange marmilade. One hour later out of the foil and back for about 1 hour indirect abd applied sauce for the last 10 minutes. They were so moist and smokey. They were so tender and had a great balance. I know that not evert cook will come out great, but i was so exicted that my FIRST cook turned out perfect. Will take some pics next time. This forum really did help me.
