Good thing we had snow!

I awoke at 0730 yesterday morning to find my egg cold and the internal temp on my Boston butt to be 44! I went to bed at 11:00 with the temp at 225 after it had been smoking for about an hour. Unfortunately I had just replaced the felt gaskets before I started. I think what had happened is that the new felt eliminated the trivial, fire-sustaining airflow that my egg had received, and when I set the lower vent to it's usual pre-felt replacement locations, the fire was extinguished. Anyway, I quickly restarted my fire, but despite cooking the butt at 250 to 270 all day, I was only able to achieve an internal temp of 170 by 11PM last night! Dinner guests were supposed to be there at 6, but cancelled (thankfully) due to the 10 + inches of snow that we received after noon!
I pulled the pork at an internal temp of 170. Tasty, but not nearly as tender as the PP I'm used to. That's OK...I've learned my lesson.

    bdavidson, Wow...well, at least the your butt was refrigerated..:-) You might have pinned down the reason also. When one fine tunes the vents..a squeak makes difference. I would rather tune mine to the 250F area for Low and Slow methods and supply adequate air from the lower vent. Gfw's recently purchased remote radio transmit thermometer would be great for monitoring..but ??

    I agree - the Nu-Temp wirless probe will work well for over night butt temp monitoring. The probes seem a little wimpy and 300 is a max for them but thats ok for butt. You could set the alarm for 130 and 190 deg so that if either are reached - the alarms goes off. I have had mine going now for 20-30 days and it works fine but its expensive for just Butt monitoring. For those who must have more toys - this is one that will have some very useful uses - but not many.[p]Tim
