Bacon Wrap Bite

I had these the other day on our annual Bed and Breakfast Holiday Tour and they were pretty tasty. They could easily be adapted for the Egg.[p]2 chicken breasts cut into 3/4 - 1" cubes (approx 24)
1 t olive oil
8 rashers of bacon, pre-cooked, cut rashers into 1/3 pieces)
1/4 c fine chopped pecan nuts
cocktail sticks, approx 24
italian parsley[p]Sauce:
4 t dark soy sauce
2 t dry sherry
1 t grated ginger
4 t honey
1 t cornstarch mixed with a little water[p]Prepare the chicken into cubes and saute in a pan with the oil until cooked through. Let them cool. Cut pre-cooked bacon into 1/3 rashers and wrap around 3 sides of chicken cubes and skew with a cocktail stick. Place wraps on a baking sheet and broil for 3 minutes or until bacon is browned.[p]Lay 24 parsley leaves on serving platter and place chicken wrapped pieces on each leaf.[p]Mix soy sauce, sherry, ginger, and honey together in a small saucepan. Heat sauce over med. heat and mix in corn starch to thicken. (thicken enough to coat the bites.) Liberally dribble sauce over each 'bite' while warm and sprinkle with chopped nuts.[p]Serve immediately or while warm.
