greasy egg and tday turkey

<p />cooked the turkey on my camp egg which is mainly a low and slow egg. been wet up in maine for a while also and it took 2.5 hours before the initial cloud of smoke stopped even with all new lump. the moisture and grease was literally pouring thru the ceramic like ive never seen before

cooked the turkey with the legs aimed toward the rear of the egg, notice how the legs are cooking first, almost 190 in the thigh when the breasts were reading 160. 325 dome and 12 min per pound

nice and moist, followed maxs recipe and it always comes out perfect. have 2 ducks to go on today, thinking low and slow with a cranberry blueberry sauce
