Armadillo eggs recipe

I have not made these yet but they sounded so good I thought I would share. This came from a BBQ book called Peace Love and BBQ by Mike Mills' It is a great BBQ book. Take spicy bratwurst sausage and mold around a hollowed out jalapeno in the shape of an egg. The jalapeno is filled with cream cheese which has been colored with yellow food coloring. Smoke for about 1 1/2 hours at 250. Slice to serve so the egg will show the yolk in all its glory This is a twist on both a fattie and a ABT's I will be making some of these in the next couple of days.

I've had a slight variation, same name. After smoking, wrap it in a biscuit and bake.
