I need a good oyster dressing recipe. My mom makes a killer scallop oyster dish. Any recipes are appreciated. Thanks, tom

    This is my Mother's recipe for Oyster Dressing. It's simple but it's a family favorite on Thanksgiving Day. I will be making it tomorrow.[p]Oyster Dressing
    =================[p]1 Cup celery chopped
    1 cup onion chopped
    1/4 cup fresh parsely chopped
    2 eggs
    1 16oz pack Pepperidge Farm herb stuffing mix
    1 stick butter
    Fresh Oysters (8 ozs)[p]Saute celery, onions, and parsely until transparent. Mix stuffing according to the package directions but add a little less water. Add 2 eggs and celery, onion, parsely. Add oysters and liquid from oysters. Melt butter and mix everything together. Put in 3 qt casserole baking dish. Bake at 325 for 30-35 minutes.

I thought it was pretty good and am doing it again tomorrow.[p]HAM & OYSTER DRESSING [p]Makes 8 Cups; TOTAL TIME: 40 MINUTES [p]5 cups stale bread, cubed[p]1 1/2 cups frozen corn kernels, thawed [p]1 cup milk, warmed [p]2 eggs, beaten [p]1/2 cup chopped fresh parsley [p]1/4 cup chopped fresh sage [p]1/2 cup unsalted butter, cubed (1 stick) [p]2 cups leeks, chopped [p]2 cups ham, diced [p]5 garlic cloves, minced [p]2 T. Worcestershire sauce [p]1 T. Tabasco [p]2 dozen shucked oysters, halved, with liquor (about 1 lb.) [p]Salt and pepper [p]Preheat oven to 375; coat a 9 x 13" baking dish with nonstick spray. [p]Toss bread, corn, milk, eggs, and herbs in a large bowl. Melt butter in a large saute pan over medium-high heat. Add leeks, ham, and garlic; saute for 5 minutes. [p]Stir in Worcestershire, Tabasco, and oysters with their liquor. Cook 5 minutes, or until liquid is slightly reduced. Add to bread mixture while hot and season with salt and pepper. [p]Bake in prepared dish for 25 minutes, or until browned. [p]Per 1/2 cup: 198 calories; 49% calories from fat: 11g total fat; 16g carb.;417mg sodium; 1g fiber; 9g protein
