Carved Roast beef or??

We are having our wedding recption for about 50 to 75 people next month at my sister’s house and I have a question about roast beef (or something similar) on the Egg. I just got my Egg at Eggtoberfest in October and have been trying things on it ever since. Does anyone have any suggestions? Something similar to the beef that you see being carved at catered events. We are having it catered but I am also planning on doing some of the food myself (boiled shrimp, cheese platters, chips and of course something off the Egg) so any ideas would be very much appreciated.

Did Pizzas the first cook and burned the curst a tad, did them again after reading The Naked Whiz’s page and they came out great! Some of the best pizza I’ve had THANKS TNW. Also thanks to TNW for the spatchcock chicken!! Great moist chicken!
Did ribs using the rub and 3-1-1 method out of Dr. BBQ’s book and they were GREAT, THANKS Dr. BBQ!
