At this year's Eggtoberfest, I had the pleasure of cooking next to dhuffjr and his wife. In addition to being an all-around great guy (and being very patient with my crazy kids!) he makes some awesome Adobo Chicken. It was one of the best things I ate at the Fest, a very cool recipe he learned from his Philippine brother-in-law. [p]If you haven't tried it yet, you need to. Check out the 2006 Eggtoberfest Cookbook. It's a very simple recipe. It's especially good if served over the Philippine Fried Rice, another recipe Dennis was nice enough to share in the cookbook! We cooked both recipes this weekend, and our friends couldn't stop raving about it. Even the picky kids liked it![p]By the way, I also need to thank whoever posted the suggestion for keeping my nice enameled cast iron Dutch Oven clean on the Egg. Just covering the outside with sudsy water did the trick. My other pots that come off the Egg have smoky residue that takes way too long to clean up. This little trick saved me a LOT of trouble. Thanks again!
