Boston Butt missed plateau?

Hi All, [p]I put on two 7.5 pound butts today at 4pm. Now the temp is 180. My dome temp is about 275. Is it common for a late plateau? Based on earlier cooks, I should have hit a good plateau in the 160 range.[p]Will it hit at this temp or higher?

    Buster Dog BBQ,[p]Did you check your thermometer? Dome temp is a little house but not so high it should be a problem. But I would be concerned that you dome thermometer is out of calibration. I would bet you cooked at a higher temp than intended. Check out nakedwhiz.com for instructuctions on thermometer calibration instructions. Good Luck.
  • Why1504,[p]Yep, thermometer is good. Used it for several low and slows with no problems and I was able to adjust it while stabalizing the temp.
  • Buster Dog BBQ, seems fast to me. In the past, folks here have talked about double plateaus. Butts are unique creatures; ya just never know. I assume these are cooking indirect.[p]If you have a meat themometer stuck in the butt(s), you might just check to make sure it is not hitting the bone, stuck in a fat pocket or way off center. Boil a pot of water and do a quick check of your dome thermometer. Other than that, you might be eating butt and eggs for breakfast, which is not all bad...........Tom

    Buster Dog BBQ,[p]Follow Sandbagger's instructions. You may have hit a bone with your meat thermometer. You may have experienced where cooking doesn't always follow typical experiences. You can hold the pork for 4 hours in a warmed cooler. Do a search but be careful with meat saftey no more than 4 hours between 40 and 140.
  • Buster Dog BBQ,[p]I think the plateau is finally here...a little late. In the last hour my temp has fallen 2-3 degrees at the same heat. I think I am finally in the plateau late in the cook. Which would be good because I need to pull around 6am for tailgating at 9.[p]Thanks everyone.

    Hang in there. Butts can be difficult... even after learning them for years. your temps sound a bit weird but that's the way with butts. It will all be good.[p]Enjoy.
