grillin' ern,[p]Yep...use plenty of it and when starting your egg do not let the temp go over 250 because it will take a while to cool it back down to 220-230 where you want it..[p]But if you really want some good advice click on the link[p]

grillin' ern,[p]One thing I have found is I like rubs that don't have much salt...I can always salt later..[p]But it really depends on what you like in taste..My wife loves when I take equal portions of..sugar, smoked chipotle
then mix in a little garlic powder, onion powder, and some turmeric..[p]1/4 cup turbino sugar
    1/4 cup smoked chipotle ground
    1 T garlic powder
    1 T onion powder
    1 t turmeric[p]Sometimes I add tyme

<p />grillin' ern,[p]I just did my first over-nighter last night. I used Elder Ward's rub and sauce b recipe. The rub and sauce were both pretty spicy (I liked them that way). Filled up my fire box, plate setter legs up on the fire ring, a foil drip pan and grid on top. I had a remote thermometer and that really helped. Came to about 12-13 hours for the 5 lb shoulder blade. Woke up a few times to check on it through the night. Turned out really well. The meat was really tender, juicy and flavorful. Lots of left over though. So, looking forward to some pulled port enchilada and pulled port pizzas. :)[p]Good luck,

  • grillin' ern, I've used Dizzy Dust Coarse, and it came out great.[p]DizzyDustCoarse.jpg[p]You can check out Dizzy Pigs website for a cooking method (dizzypigbbq.com). You should also check out TNW's for detailed instructions on both Elder Ward's style and his own experience.[p]My favorite rub though is Bad Byrons's Butt Rub.[p]buttrub.gif[p]Everything's better with a little butt rub. Mildly spicey, but good stuff.[p]Good Luck!

  • icemncmth,
Thanx! went to naked whiz and that's exactly what I was looking for. Now off to pick up a charcoal starter and a plate setter. [p]Ern
