Blackened Catfish

Does anyone have a good blackened catfish recipe? A link or directions on how to do it would be nice. I bought a new cast iron griddle that fits perfect in my large bge so I thought I would try something different. Thanks fellas....:)

    Just follow Chef Paul Prudhomes recipes on the back of his blackening spices. Key is to make sure you apply plently of melted butter.[p]Mike

  • Brandon,[p]Cooking blackened meats on a cast iron griddle is one of the few things I still use my Weber Kettle for. I use a charcoal chimney to get the coals going really well, dump them on the charcoal grate and settle the griddle right down into the coals. 15 minutes later I'm ready to cook![p]Mike

    <p />Brandon, just search the web with "blackened steak fish seasoning recipes" and you will find enough to keep you busy. Don't forget the word recipe.[p]If you have the bayou classsic double sided griddle, you cut the handles off an it will fit inside the fire ring....see pic. I built a ring to hold it about one inch off the lump. [p]My family is not much on fish, but we sure like blackened steaks. It's usually a game time decision which way I cook em, grid or griddle........[p]I also blacken on my turkey fryer, now that is hot....YB's suggestion.[p]T
