Was thinking about making some burgers using ground buffalo - did a quick archive search but didn't come across anything that jumped out. Anyone got some suggestions. [p]Thanks in advance. [p]Tim

    There's a buffalo ranch in my area that sells to a couple local grocery stores, so that's about the only burger I use any more. Tastes great, like I remember beef used to be when I was kid (long ago...: ). It's on the lean side, so try not to overcook. I usually mix in a little DP Cowlick or Raisin' the Steaks, make 6-8 oz. patties, and put 'em on a 500 or so fire for a couple minutes, flip and close the vents after about a minute and let and let dwell for 4-5 minutes or so. After opening the vents and "burping" the Egg to preserve arm hair, I check for doneness. Rare to medium rare works best for me, after medium I would think they might dry out some.

  • The ground buffalo I have cooked with was quite lean... I would plan on mixing in some fat trimmings if you have any. (Or am I the only guy that saves stuff like that in the freezer?) [p]If not you can use bacon grease. If you have to "go lean" then make the patties thin and make double cheese burgers maybe with bacon to add some flavor.
