JJ Your ribs are next!!

Hopefully I will be getting off work early today. I am going to try some spare ribs direct. I have them in the fridge with the rub on since last night.
Is this right 3-3 1/2 hrs at 275*?

275 is a bit much. I would go with 225-250 tops. Minimum of 3.5 hours. IMO.
Have fun. JJ's direct method is a great way to do ribs. Try Cat's marinade when you get around to it!

3-3 1/2 hours sounds like a bit too much if doing direct at 275F. I would start looking at pulling them off after 2 hours, particularly if you sauce them with a sugar/ketchup based sauce, while cooking. They might last a little longer but watch out for them drying out.

NB nailed it. 225-250* and his time is on the money. You can check for tendernes using a fork. Easy release they are done. another way to check is lift them with some tongs in the middle they should just about fall apart. If you are using a rib rack no need to turn them. If laying on the cooking grid flip them every 45 min.

Nature Boy, I'll echo another poster, where is Cat? She has been absent too long. Besides I need some more recipes to use up some of those pounds of juniper berries I've got in the freezer. Bet Pensky's is still wondering who that fool was that ordered all those! ^oo^~

Nature Boy,[p]Ah, the XFl. Think it will be any good? I'm hoping it won't be really silly like the WWF with chairs and tables breaking and distracting the refs and such (ie - I hope it's not scripted). I probably won't watch this weekend, but I have to admit I'm very tempted to attend the first NY/NJ Hitmen game next Sunday at the Meadowlands. Even if the XFL ends up stinking, it's still a good excuse to cook and drink beer with friends in the Meadowlands parking lot...[p]Cornfed
