Can you smoke cheese on a BGE

Unknown
edited November -0001 in EggHead Forum
I am thinking about smoking some gouda cheese on my BGE and wanted to know if this is possible. Any tips on such as temp or type of wood to smoke with? Thanks in advance. Brian

  • I have looked around and i found some sites that say that cheese should be smoked at 90 to 100 f. Can a BGE temp stay steady at 100. Brian

  • Brian Dumais,
Yes you can. I used someone else's advice (wish I could remember who) when I tried it and it worked well. Here's a photo of my setup. You may have to add ice to the tray during the cook but it won't change the outcome.[p]SmokingCheese1.jpg[p]I used hickory wood, colby cheese (it was on sale) and 115° dome temp. (I seem to recall my mentor said the white cheeses smoke better.) Yes, 115 can be maintained long enough to smoke cheese (about 30 to 40 minutes). Just don't build your fire too big to start out with. Tasted great. Probably a bit longer and it would have been even smokier tasting.[p]Spring "Smoking Frozen Water" Chicken

  • Brian Dumais,
I've smoked Gouda before and it is excellent. See my link above for pictures of my cheese smoking setup. [p]
