wood chips vs wood chunks

I have been doing some ribs lately and have some hickory chips that I have been using.
Here is my set up.
get the egg going / throw a couple of handfuls soaked chips/ next put the plate setter and then drip pan with a little apple cider in it to steam from underneath. put on the ribs and 3-1-1.
I notice that after about a hour I dont see any smoke coming off.
So I try to toss in thruohg the grate and plate setter and hope they start to smolder but nope. then dont.
so how do all of you replace the smoke? take you whole setup out and put more chips. [p]so that is my questions will a chunk of wood give me more of a smoke for longer. YES but will it give me too much. I like the smoke but not too much.

I put in a couple of chunks around the outside and then bury some chunks in the charcoal as I'm filling the firebox so that they will begin to smolder as the fire burns down. For me this seems to work well. I like the smoke flavor, and I don't think this is too much.
