Spicy/sweet Tuna Steaks
Broke in my new egg with this recipe.[p]2 Fresh tuna steaks [p]Marinade
1 7.5 oz can of chilpolte peppers in abado sauce
1 Tbl spoon ground pepper
1 Tbl spoon kosher salt
2 lemons
1 lime
1 cup honey
1 cup extra virgin olive oil
1/2 bulb minced garlic
6 or 7 drops habenero hot sauce
All of the ingredients need to go in a container that will completely submerge the meat. Squeeze the juice out of the lemons and lime in the container. Chop up the chipolte peppers, add along with the sauce in the can. Add remaining ingredients, stir & add fish. Let it marinate in the fridge for 2-3 hours. Remove fish from marinade & coat with honey. Throw some alderwood chips on on a 500 degree F egg, and cook on each side for 4-5 minutes. The fish should be firm as well as, pink in the middle and white on the outside. Top with spicy salsa or another can of chilpoltes. [p]Turned out really well. The sweet and spicy flavors complement each other exceptionally.
