Corn meal/starch question

An Egg Downunder

I want to try the DP crunchy wings recipe but can't find products labelled 'corn meal' or 'corn starch' in Australia. I can get 'corn flour' which is a very fine powder - does corn starch have a similar consistency? And how coarse is corn meal - would a fine polenta do the same job?[p][p]

An Egg Downunder,[p]Look in an oriental grocery store for a product from Thailand called "Amidon de Tapioca", tapioca starch, this will work for the corn starch.

An Egg Downunder,[p]I think that corn flour and corn starch are the same thing. Corn starch is a white, very fine powder. Corn meal is like polenta.[p]PS: I just finished eating your thai chicken thighs, and that was some of the best chicken ever. Thanks for the recipe.

The corn flour should work fine too. You just want to add something to the normal flour to make it crunchy when it cooks.

Corn Meal is certainly the same as Polenta (save for possible courseness of grind), but neither is the same as cornstarch.[p]I found an interesting link that may be of help. [p]Based on the information in the link, the substitute is cornflour. A quote from the link are as follows:[p]Cornstarch is called cornflour or maize cornflour in Britain, Australia, and New Zealand. Don't confuse cornstarch with the finely ground cornmeal that Americans call corn flour.

dhuffjr,[p]Who is the third? I know that at the place I bought my egg (McMahan's Bottle Gas) on July 1st of this year, someone else bought one about the same time. We both go in a lot to buy accessories. Is that you, or the third guy?[p]I will not be going to Atlanta. I am an assistant professor going up for tenure at WSU this year, and all of my energies are directed at either (a) getting tenure or (b) cooking on the egg. You going?

No its not me, I got mine in 1998 at a garden center in COlumbus. Someone else from Dayton went to Atlanta last year, I never bumped into them though.[p]Good luck on the tenure process. There is a professor from Miami U at Oxford I've noticed around on the board here too.
