Mediocre Babybacks

I bought A cryovac pkg of Baby Back ribs at Sam's, they are normally pretty good. Did the evoo, mustard and a rub thing, plastic wrapped them and refridgerated for about 6 hours.
Cooked them indirect at 225 for about four hours on a v rack. I spritzed with Apple Juice and apple cider vinager mix and flipped every half hour or so. I pulled the plate setter and cooked indirect at 350 for the last hour. Total 5 hrs.[p]Very disapointing, my wife had only two ribs. I managed to force down the rest of the rack. The other sits in the fridge. I have made MUCH better ribs on my old Weber with Brickettes in an hour and a half, without all the fuss. [p]I am obviously doing something wrong. But what?

    if you did them in an hour and a half on the weber, you weren't barbecuing/smoking, you were grilling.[p]you can treat the egg the exact same way you did your weber. no need to go 5 hours with a method you aren't interested in. just do them the exact same way you did on the weber.[p]wess b has a great walkthrough on his site about lo-and-slo ribs, which involve smoke and long low temps to break down the collagen, etc.[p]depends what yer lookin for. cooked ribs? cook them the way you always did.[p]if you are looking for barbecued ribs, smoke ring, smoke flavor, etc., it's a whole new ball game. not hard, just different.

    Probably didn't get them cooked. If 225 was your dome temp and you had the lid open every 30 minutes, my guess is they were tough. Some of the baby backs today have a lot of meat on them and can take as long as spares to cook. Don't give up, try a little higher dome temp like 250 and flip them around after 2 hours or so.     Thanks guys, you are probably right. I am going to throw on some Bison burgers, after the Patriots demolish the Jets, and I may pull that uneaten rack out of the fridge and throw it on with the burgers, I will just consider it a long dwell.[p]Haven't given up yet!
