I Lit, I Grilled, I Ate!!!

I finally got the chance to try out my new Egg tonight. I wasn't sure what to try so I thought I would do something I knew about...wings. I like my wings crispy with flavor from the sauce. So I fired up the Egg. I couldn't believe how easy it was to light, three pieces of newspaper and it was up to over 600 in about 12 minutes!!! I played with the vents on the wheel and the screen a little and got it down to about 325. The Egg responds to adjustments like my Mini Cooper. [p]The only thing on the wings was a good dusting of corn starch. Right off the bat I learned two things, put the grate on the Egg first and oil the thing if you are doing chicken!!! When I tried to turn the wings the first time almost every one of them stuck. Oh well, live and learn. I turned them every ten minutes for almost an hour. They came out nice and crispy. I coated the wings with a good sauce of butter and wing sauce. HOLY COW!!! Talk about moist!!! These were almost as crispy as fried ones, and easily as moist and good. These were the best I've ever had outside of a restaurant, and better than a lot inside. I've shut all the vents and put the ceramic cap on. I'll see in the morning how much lump I have left for pork chops Sunday night!!!![p]Oh, I thought I grilled enough to have leftovers. I didn't.

    one thing i learned early on the egg was that if it sticks when you go to flip it, it ain't readt to flip.[p]one thing you might not have noticed, and which is my favorite aspect of the BGE and chicken.... as long as they lid is closed, there are no flare-ups. it's an airtight system, and when burning, the oxygen coming in from below is consumed by the lump and there's no spare oxygen to help ignite the fat.[p]same for rib-eye steaks and other fatty cuts

    FSUScotsman,[p]I don't want to disillusion you but I suspect that the initial burst of heat (to 600) might have been mostly from the newspaper burning rather than the lump. I think you'll find that most of the experienced Eggers on this forum will let the lump burn for closer to 30 minutes in order to get an even and stable fire and to burn off any impurities (dust, dirt, old drippings, etc.) - you probably achieved that as you let the Egg settle down to your preferred temp. [p]But congrats on your first cook!
  • stike,[p]So my wings, even on for ten minutes or so weren't ready to be turned yet because they stuck?[p]And from reading all these wonderful postings I knew it wouldn't flare!![p]One thing I did get that I didn't expect...I wear glasses and since all the moisture is held inside, when I opened the Egg the first time WOOSH!!! a roll of moist air came out and my glasses fogged up!!!! You don't get that with a gas grill!!!!

    I think you are right about getting the grid up to temp before putting your wings on next time. If you have a good hot grid, they should be fine and not stick. See if you can allow yourself to just let them sit for longet than 10 minutes. I think you will find that there is much less tending needed when cooking with the egg. Just a thought.     Be careful of flashback. You don't ever want your head too close to the egg if you get a flashback. Check the Naked whiz site about flashback. By the way, does FSU in your name mean Florida State University. My daughter just graduated from there this year.

    be VERY careful when doing ABTs, as the steam can burn chemically too!.[p]'wet' veggies (like eggplant) really can fill the dome with steam, and you do risk getting a burn when opening and spilling the steam.[p]be careful

  • Bill from Ct.,[p]Yes, I've read that about the flashback and will be careful. As for the FSU, it sure does mean Florida State. Right now a very unhappy FSU fan.
