You didn't say what the internal temp was but at 19 hrs it was at 185 so I know its done at 21 hrs. It's going to be darn hot so wear gloves. It would normally rest for 1-2 hrs and to cool but if diner is waiting - start pull'in. Like NB said, it will come apart in your hands (wear gloves on them hands though!).[p]Tim
