It's early afternoon game day. My butts been cooked and is ready to go. And, I stayed up til all hours last night fixing up the ribs. I took time out to watch
that Duke/Maryland game. What a show. [p]I'm gonna throw on my wings in a bit and I have some fresh, cored pineapple for grilling as a dessert. [p]The ribs were spares with Cat's marinade on them. I had my dome temp at 215* and I let them cook for maybe seven hours. I had three racks and I had them
sitting in a rib rack. I turned them once in the middle of the cook and I used hickory chunks - one or two. it was hard taking them off because they were so tender
they almost broke in half. [p]I hope I don't fall asleep during the game.
