Clays pulled beef

As you can see by my name I don't have a Big Green Egg YET, but that will change one of these days. Right now I have a WSM which I really like but I'm wanting to move up from good to better. Is there any reason I can't fix Clay's recipe on the WSM. I go by grate temp so I would assume that would be aroung 220. I have a Lodge dutch oven the lid has a 12 stamped on it I thought this meant 12 qts. or does it mean a # 12 dutch oven like he says in his recipe. Also I read on here somewhere about putting a cut up apple in this recipe at sometime but I don't see it in the recipe that's posted, is this worth doing. I assume any recipe on here as long as it's in the temp range of my WSM I can fix on my smoker. Is there any others who switched from a WSM to a Big Green Egg, any thoughts on switching, not really comparing the 2 just wanting to know if your glad you switched. As you can probably tell I've pretty much already bought one just no money or merchandise has switched hands yet. Thanks for the help.
P.S. Keep up the good information but please cut back on the pictures, there giving me this terrible fever and all the doctor says is get one Big Green Egg and call me for supper.

    wouldn't see why it wouldn't work. As for the #12 Lodge - that's misleading. I too have a #12 and it is only 7 quarts. As for the apple that was in Clay's initial thread about this recipe but he didn't include it when it went to the recipe section. I always put in one finely diced large Golden Delicious apple in the final stage. BTW That recipe is a sure hit in this household! Good Luck!

    I've done this on my lg Egg and I used to cook on a WSM, no reason on earth it shouldn't work. You may end up having to add fuel cause it is a long cook. -RP
