plate setter

edited November -0001 in EggHead Forum
I'm planning on cooking a boston butt tomorrow early. I'm not sure when to put the plate setter on. Before lighting or just before you put the meat on. Do I need to use a drip pan if I have the plate setter? Any eggspertice would be appreciated.

gatex,[p]I get everything temperature stabilized, then put the plate setter on and let everything temperature stabilize again. Definitely use a drip pan, unless you want your plate setter gunked up with grease.

    gatex,
I put the plate setter in, legs up, as soon as the fire is started. That way, it all comes up to temp. at the same time.....

gatex,[p]Without the plate setter warmed up, the internal temperature is not reliably set. Install the plate setter as soon as the fire is reliably started, temp up to 175-200 degrees. Waiting this long avoids the possibility of having to remove the plate setter to restart the fire.[p]Spin
