8 Pork butts on an XL

I have been an egger for a year and half now and had great success doing multiple 7-8lb butts on my XL. (the most I have done is 4 at once.)
I guess my question is, if I take the ring out, use the plate setter and rig multiple tiers of grates(5-6" apart) do you think I can achieve 8 pork butts on an XL Egg?

The reason I am doing that many butts is because my brother and I have a party every year called HotRod Barbeque and are expecting 125 people. I am the one designated to cook the meat this year and I was planning on doing 8 pork butts smoked for about 16 hours, and then switching to chicken breasts (in a great pineapple whiskey glaze) for those that prefer something other than pork.
