Who says you need foil for ribs?!?

After all the talk about the 3-1-1 method, with foil and without, and after trying the 3-1-1 foil method with great success, I decided to try a straight indirect cook without foil on some nice spares over the weekend. Sorry, no pics, but they came out fantastic. 250 dome for 5-1/2 hours for a fully-loaded large egg (4 full slabs with extended grill/inverted rack), then foiled and into the cooler until the guests arrived. Nice bark from the Dizzy Pig Coarse Dizzy Dust and great color from the apple chips/smoke. :woohoo: Extremely tender, but not falling apart.

Huge success without the foil! Thanks for all the misc. tips, everyone. This site rocks. Guests were raving, saying the ribs were better than a professional bbq caterer we all know. If the egg can produce food like that with me at the wheel, it is definitely one amazing tool.

Now all I have to do is convince my bud that you NEVER BOIL YOUR RIBS! :blink:
