First Turkey Problems

I smoked my first turkey today but ran into a problem with my dome themometer. I built the fire and got it up to temperature. Then put in the wood chips, place the plate setter in legs up and placed the grill on top of them. I placed the turkey on the grill in a v rack and drip pan. My dome themometer would not get ablve 200 degrees so I put my Taylor on the grid and used it to do the cook at 350. The turkey came out good and when I closed the lid my dome themometer went to 400 right away. My question is should I leave the grid out and set the pan and v rack down in the plate setter to eliminate the themometer problem or is there another way. Thanks for your input. AZ

I have the funny feeling your dome temp probe was touching your bird. Mine was just a 12 lb bird, but I had to move it around to keep the dome probe from touching the bird. -RP

AZRP,[p]Mine was just a 12 lb also. I moved it to the back side to make sure it wasn't touching. I took the thermometer out a ways as well. The bird turned out great. How did yours turn out? I'll bet it was good as well. AZ

It was good but the gravy was outstanding. Something about the slight smokey flavor in the gravy that you can't get out of an oven. -RP

you should start your Egg with the grate and plate setter inside and any other cooking objects. When these are added later the heat is absorbed from them and thus lower dome temp.
I do a nice turkey breast, indirect at 325 dome, I pull it around 160.

tach18k,[p]That make a lot of sense now that I think about it. Thanks for the tip. Also the turkey breast sound really good. I have been thinking about doing them instead of the whole bird. AZ

AZRP,[p]That gravy sounds really good. I will need to learn how to do it. What kind of drip pan do you put under your bird? This time I just put an aluminum disposable. AZ

I used a disposable too, ended up with about a cup of liquid after pouring off the fat. I made a roux with flour and butter then added the liquid and 4 cups of chicken stock. Tasty. -RP

AZRP,[p]I'll try the recipe. It sounds good. I used an old disposable because I was in a hurry. First time using my new v rack, grabbed my 9 x 13 pan and it was to big for it so just grabbed an old one that was handy. Wife said we could have made gravy if the pan didn't have ashes in it. Thanks again for the recipe. AZ
