A quick question. After you cook a butt and start to pull it do you just use the tender meat inside or do you also mix in the harder dried out meat from the outside of the butt?

    Mix it all together! Actually, at my house, the dry but tasty "bark" as most call it doesn't get too far because my 14 y/o son eats it before it hits the plate. Of course, I'm just as guilty seeing that I have to continually "taste test" as it gets pulled.

    nutcase,[p]Just send me that hard dried up outside meat. :)[p]Assuming you rubbed the butt with a good spice mixture, that is where tons of flavor is. At my house the family will hover while I pull the butt to snach a piece of the bark, or outside meat.

    Thanks for the advice. Yesterday someone posted on here that they used a cake mixer to quickly shred the pork. Anybody else try this?

    I treat the bark ends like burnt ends on a brisket. Save for beans or just a snack instead of a sandwich.[p]Mike
