    Nancie,
The only major difference between your small and the 3 larger sizes is that you can not reach temps much past 650 or 700. I do not own a small but will get one soon. Ask any questions you want on this forum and will get the right answers. The procedures you are the same. Good luck, Tom

BajaTom, I beg to differ there Tom...I think you need to qualify your statement by saying "some people" can not go over 650 to 700 in a small. Without the air-restricting spark vent in place and using Ozark Oak lump I can hit and sustain 825+ degrees and I know I'm not alone. This falls into that point where some people can and some people can't - same way as some people need gaskets and others don't!

Yep, this is one of the mysteries of the Egg. Tim M used to post here a lot and he was an experienced Egger with a fair amount of smarts. He couldn't get his small over 550 to save his life. I got mine up to 750 easy peasy. I was going to go out to Kitty Hawk one day and take my small so we could do a side by side check, but it never happened. [p]TNW

Nancie,[p]Wow, what a gift. You owe your friend a fantastic steak! Don't even think about going out, the small is a steak machine![p]The method used in the video will work fine on the small! Just keep reading and posting here! You'll be a pro in a week or so![p]Smokey

Nancie, Grab an extension cord and your hair dryer if you're having trouble getting it hot enough. Aim the hair dryer at the bottom vent and the temp will soar. Do this before you put the food on the grill or it will get covered with ashes. JCA

    The Naked Whiz,
my small will get into the searing temp ranges easily, but it does take much much longer than the large to do so, and it wont hit 1100 by accident when im not paying attention like the large will. just the way it is
