Brie on the Egg

Last summer someone posted a recipe for a whole wheel of brie on the egg.[p]I can't seem to find it and tonight is the night.[p]Can anyone help me.[p]Thanx in advance.

    Lori's Warm Brie Appetizer - Serves 1[p]Ingredients[p] 1 round double-cream wheel of Brie
    1/2 cup light brown sugar
    Raw Walnuts -- to taste
    3 apples- Cameo or Fuji -- firm sweet

    [p]Instructions[p]Sprinkle some brown sugar and walnuts on the bottom
    of a baking dish. Cut
    the wheel of Brie into sections and lay it on top of
    the sugar and walnuts.
    Place apple slices into the spaces between Brie
    wedges. Cover all with the
    remainder of the brown sugar and more walnuts. Bake
    at 350 until melted and
    gooey, about 15-20 minutes.
    Serve warm with crackers and more apple slices.

I obtained this from
    a cookbook called Sticks & Stones by Ted Reader and Kathleen Sloan.[p]1 maple plank, soaked ( I used cedar)
    2 small wheels brie (1/4 pound each.)
    2 heads garlic, seperated and peeled
    1/2 cup plus 2 tbsp olive oil
    2 green onions finely chopped
    1 red bell pepper, roasted, peeled, seeded and finely chopped
    2 tbsp chopped fresh thyme
    2 tbsp balsamic vinegar
    2 tsp coarsely ground black pepper.[p]Preheat grill to high.
    With a sharp knife, scrape rind off of the top of each wheel of brie to expose cheese, Set aside.
    Heat 1/2 cup oil in a small saute' pan and add whole cloves if garlic. Reduce heat to medium and
    simmer garlic in oil until softened and beginning to color, about 20 minutes. Remove from heat
    and, using a slotted spoon, transfer garlic to small bowl to cool. Reserve garlic flavored oil
    for anothe use. Mash garlic cloves using the back of a fork. (I skip all that non-sense and just
    toss in a teaspoon or two of store bought minced garlic in a jar). Add green onions, red pepper,
    thyme, balsamic vinegar, 2 tbsp olive oil and black pepper. Season with salt to taste, Spread
    garlic and pepper mixture over tops of of brie wheels (I heat the mixture on the stove first).
    Place soaked plank on grill, close lid and bake for 10 minutes or until it begins to crackle
    and smoke. Being careful of smoke, opne lid and place cheeses on plank. Close lid and plank-bake
    for 10 to 12 minutes until cheese begins to melt and bubble. Remove planked cheese from grill.
    Serve with slices of crusty bread, flat bread, or crudite's, (I kinda like Ritz crackers myself).[p]Rick

    Next is a picture of the Brie with pepper mixture topping on a cedar plank that Chubby and Anne did. This is just before it went on the egg. I wasn't able to get a picture of the finished product because I was laughing too hard watching Chubby try and put out the fire (the cedar plank caught fire and made for some exciting moments). The finished product was very good though.


    [p]1 Maple Plank, Soaked (at least 4 hours)
    2 1/4 Lb. Each Brie, Small Wheels
    Olive Oil
    6-8 Cloves Garlic, Chopped
    2 Green Onions, Finely Chopped
    1 Pepper, Bell, Red, Roasted, Peeled, Seeded & Finely Chopped
    2 Tbs Thyme, Fresh, Chopped
    2 Tbs Vinegar, Balsamic
    Salt & Pepper To Taste



    *********HAVE FIRE EXTINGUISHER ON STANDBY!!**********
    1 Preheat BGE to 400°F. dome. Scrape rind off top of each wheel of brie to expose cheese and set aside.
    2 Heat olive oil in sauté pan (or cast iron skillet) and add garlic, cooking until softened but not browned. Add green onions, peppers, thyme, vinegar and sauté for 5 minutes, stirring occasionally. Remove from heat and salt & pepper to taste.
    3 Place the maple plank on direct grill and listen for it to “pop” (about 8-10 minutes). Divide pepper mixture evenly on top of brie wheels and place on plank. Close lid and bake for 8-10 minutes until cheese begins to melt (or plank catches fire as in Chubby’s case). Serve with slices of crusty bread or crudites.
