Smoking with pellets problem

I used the pellets in the foil pouch tonight for flavor. I put the pouch directly on the heated lump. I was cooking fish at around 400 degrees. Anyhow, within 5 -10 minutes, the bag breaks open, the pellets cook through in about 2 minutes and no more smoke.[p]Did I make a mistake by putting the pouch directly on the lump? What should I have done to let it smoke for 20-30 minutes? Thanks.

    Sandman ,[p]Well you might have melted the foil at that high of heat. I always double wrap the pellets when I use them. But, I only use them in a pinch, I just perfer chips and chunks. I think they work really well in a pellet smoker but I haven't ever used one. It would be good for Dr. BBQ to weigh in here.
  • I use pellets in a ceramic, WSM, log burner and my FE100. I also like chunks or chips if I can get them but I always have pellets. The best way to use them in a ceramic is to get a little metal pot or box and drill a few small holes in the lit. That way the oxygen will not get to it and you will get the full smoke out of them. If you had used serveral layers of foil it probably would have lasted longer and did the job. I personally don't like melted aluminum in my cookers though.

    Pellets can be used in a few different ways. Foil pouch, cast iron cook pot, or straight onto the coals. You will get a great product with any way. I would say that if you do use foil, you might want to double wrap. Also, if you are doing something at 400 degrees, smoke will not add much in my opinion as it will be a quick cook and not enough time for it to absorb. Save the pellets for the low and slow....they are nice. BBQr's delight make a great product. Try the orange, it is very nice on poultry. [p]-Kevin

  • Sandman ,[p]A couple things...make sure you are using heavy duty foil. I had the same problem using regular foil but heavy duty foil solved this problem.[p]I found the perfect way to use pellets which is using the cast iron smoker pot that BBQr's Delight sells. This is a great product and works good for an hour of smoke.[p]I ordered 8 20lb bags of Trager pellets in all flavors. Shipping was included and they threw in two free bags. It has been fun mixing the different wood pellets for different flavors. The pellets are much easier than wood chunks/chips for me.[p]Ray

    I've used the pellets and didn't have any trouble. I made the pouch out of a double layer of heavy duty aluminum foil. It didn't burn through until it was done smoking. I put the pouch right on the lump, perhaps half way on the actually burning spot and half off.[p]TNW
