How do I use my wok on the BGE?

Love our new BGE. Want to use high heat for authentic wok cooking, ie stir frying. How to do on the BGE?

  • agnes,
I tried woking on an egg but was unable to fit the traditional cast iron wok inside the egg. I also wanted the high heat the is required for stir fry but considering the wok will be sitting close to the fire and little room to work inside the egg, I opted for a gas blaster made for wok cooking. This gives me about 30,000 to 40,000 BTU for stir fry cooking. Also there is a chance that you could fry your gasket and injure your arm from the heat.[p]Andres

agnes,[p]I've got a large BGE and a 14" carbon steel wok with steel handles. I open the bottom vent all the way and remove the top cap. I ligth the charcoal, put a wok ring on the grill and the wok on the ring. I close the egg and wait for the temperature to get to at least 700. I then put on a orca oven mitt, open the egg (making sure to burp it) and start cooking. I use a wok spatula to stir the stuff around. The mitt is on the left hand so I can swirl the wok as needed, the spatula is in the right hand and is long enough that I don't get burned too much. It does get hot but the cooking times are so short that it only hurts for a little while. (grin)
