Requesting Suggestions for Boneless Leg of Lamb

I have a relatively large boneless leg of lamb prepared (stuffed with seasonings, etc. and neatly tied) and ready to cook this evening. I need suggestions regarding the best set-up in the egg. I'll sear it on "four" sides first, then cook it until it in a v-rack until it is between medium and medium rare. I'm assuming I need to cook it with a dome temp between 300* and 350*. My main question is which set-up to use in the egg. I could use the plate setter, drip pan, grid, and v-rack -- or could just place the drip-pan on the grid without the plate setter and put my v-rack inside the drip pan. Any and all suggestions will be appreciated. [p]

    Chuck/Tx,[p]My preference would be to use the plate setter (legs up), a grid, and put the drip-pan with v-rack on the grid. That way you can catch your drippings and use for a baste or save for a gravy.[p]If you eliminate the plate setter the drip-pan receives all the radiant heat of the fire and the drippings tend to char.[p]BTW, I've been known to add some red wine, diluted with water, and a sprig of fresh rosemary to the drip pan, maybe a slice of onion or some orange juice and peel. After I scrape the caramelized bits from the pan and separate the fat, I have a very interesting beginning for a sauce or gravy.[p]I usually use a dome temp a little higher, 400°, aiming for a grid temp in the 350 - 375 range.[p]HTH.[p]DD

  • DobieDad, no problem, I put the wine in the drip pan, i.e. I didn't drink it.
