I picked up a whole beef tenderloin at Costco yesterday and cut it into fillets. Kept 2 out for dinner and vacuum sealed the rest for the freezer. I peppered each side and put them in a zip lock and gave them an hour soak at 100 degrees. Then I salted them fairly heavily and put them on the small at 600 dome. I was having trouble getting it any hotter, probably cleaning time. About 4 minutes a side and a ten minute rest under foil gave me 135 internal temp. My wife and I agreed that they were outstanding. At $50 for the loin the fillets end up being $5 apiece, pretty reasonable. -RP
