Ribs - I want to cook my first ribs this weekend

    A lot of people use the 3-1-1 method to cook their ribs. I cook my ribs indirect for 5 to 6 hours at about 240/250 dome temp. I slather with yellow mustard and apply my favorite rub. I usually do 3 racks cut in half placed on a rib rack. This keeps the ends of the ribs from getting burnt. Temp control is critical for this cook. When the meat has pulled back from the bone your ribs are done. Good luck, Tom

    Lovetocook,[p]Ribs love low and slo. Get and keep your dome temp stabilized between 225 - 250. I've mostly done ribs with the 3-1-1 method, but just doing without foiling and mopping for the last hour works quite well too. Last week, for the first time I let the ribs sit in rub for about 16 hours in the fridge. Usually I just do them an hour or so in advance. Both the flavor and tenderness seemed a little improved.[p]gdenby
