b back ribs 3-1-1 or 5 hrs indirect?

I'm looking to do my first ribs tomorrow and decided on baby backs from Sam's. I've been scouring the forum for the best method and I can't convince myself of which method to use.
At present I plan on..
- cooking at 250 - 275 dome
- spritzing with apple juice (suggestions for mixture appreciated)
and either 5 hrs indirect or the 3-1-1 method
I would like a little texture to the ribs, i.e. not soggy, and would like the meat to be tender.

I decided on a Memphis style sauce, adjusted with habanero for added zing.
