Jose,
Baby backs aka scarce ribbs, not my favorite. Beef ribbs too greasy, whole rack of pork ribbs, yum yum[p]Chef Jerry

Jose,[p]Most tend to cook pork spareribs vs. baby backs as they have more meat, better taste and are substantially less expensive. I do like beef ribs, they are quite fatty but I think taste so much better than pork. Difficult to find though, as the only place I can find them in the Philly area is at a Wal-Mart SuperCenter. There are several cuts of pork ribs. Never eaten at Tony Romas. But if the ribs have a fair amount of curvature to the bone, then it's likely back ribs.[p]I've tried to cook beef ribs on a gas grill before and they were absolutely horrible. Surface was charred. Meat was tough. ...just nasty. But I've had such good results with pork ribs on the BGE that I'll try them again soon.[p]AFAIK, there are also ribs for venison & bison. I'm guessing just about any big mammal. ....I really wish I could find a local store to buy venison.

Jwirlwind,
Beef ribs when cooked correctly are not that greasy. That being said, I consider beef ribs one of the hardest dishes to cook and I have cooked more wrong than right.
Ribs have a big beef flavor. Some fine chop houses will even have short ribs on the menu. Another example is Fogo de Chao, beef ribs are one of their signature dishes and the meat is rarely greasy.[p]Don’t give up on beef ribs just yet,
