Started on my first butt yesterday at 2:00 p.m. Now 27 hours and fifteen minutes later it is finished. I was able to keep the dome temp at 200 all night. I had to add more lump at 10:30 a.m. My internal temp at that time was 154 degrees. I had to push dome temp up to 275 to finish.
The butt was 5.6 lbs. and is very tender and juicy. Can't wait to try a bite.
