X-mas Eve jerky

<p />Doesn't this look yummy????? Cooked 7 lbs. of jerky yesterday on a double rack system I made. Kind of hard moving the jerky around on that lower rack. Worked okay. The jerky is great though. :>) Can make it a little more spicy next time.[p]Happy Holidays to all!!!!!![p]Mick

    <p />MickeyT., nice looking Jerky - I used a 2 level grid last time and it worked great - I fastened all the bolts to the center grid - it stands on the main grid and the top grid merely sits atop the center grid - to turn the jerky on the center grid, merely lift the top grid off. Merry Christmas - nice looking Salmon! :~]

    Looks GRRR...ATE! I kept an El Dorado smoker around for doing jerky untill last week. I cooked 9 LB on the EGG. I always hang the strips on tooth picks through the grill. It cooked in half the recomended time of 10 to 123 hours at 175 Deg. I know some people flip the stuff during the cook, but I would rather do the work in advance and just wait. I did nothing from the time I put the meat on till the time I took it off and it was perfecto! I use the same ste up that you have and Dave Samper taught me to make. Just put some foil on the lower grill and hung the strips.
