Skirt steak suggestions

I bought 3lbs of skirt steak from Sams for tonights cook. I'm thinking of trying this recipe from Michael Chiarello. You pound out your steak and season with just black pepper. For the stuffing you use provolone and prosciutto. Wrap and secure with toothpicks, grill and cut into bite size pieces. I would like a sauce recipe to go on top of the meat. Any other suggestions would be appreciated. I've done flank steak but never skirt steak. Thanks, Tom

    that sounds pretty tasty. . .not sure why you would want to sauce it?? . .. .are you going to marinade the meat?. ..some balsamic vinager/olive oil (try newmans balsamic vinager salad dressing). . .makes a great marinade for skirt steak. ...and/or include some roasted sweet peppers (ala my flank steak recipe) ... i just think a sauce would cover up all those great flavors (the cheese and prociutto) IMHO ....

    I have a bottle of newmans dressing in the frig. Thanks for the suggestion. In the TV show he sauced with something I just can't remember.
