Stuffed Mushrooms

edited November -0001 in EggHead Forum
Hello, Going to make some stuffed mushrooms tomorrow. Does anyone have some good recipes? I'm open to all suggestions as I have'nt made these before. Don't want to screw them up. Also, do they go good with Budlights or should I consider another beer? Thanks

    <p />Brunomax,
HMMM. Crab stuffed or sausage stuffed portabellos. Cream cheese, crab meat and fine shredded cheese. Stuff, cook enjoy.
crabshrooms3.jpg[p]Brown some sausage. Marinate portabellos in Italian Wishbone dressing. Cook gill side down. Flip add sausage and cheese. Enjoy after cheese has melted.
They go really good with margaritas on Friday late afternoon.

    Brunomax,
Here is an option for you, just go simple. Last year at Eggtoberfest, I made grilled mushrooms. They are simple and delicious. Get the normal white button mushrooms and simply fire-roast them at about 325. Remove the stems and cook for a couple of minutes stem side down. Then flip them cap side up and continue to grill. You do not want to over cook the mushrooms, it is enough to heat them but they need to be firm. Just before you take them out, put a spoonful of compound butter in the center. Let them sit for just a minute more or until the butter softens. [p]Take them off and serve. You have a simple butter stuffed mushroom. The fire roasting of the mushrooms really brings out their flavor. For the compound butter, I add garlic and parsley to the butter. This is an easy recipe to make ahead of time and just cook when you need to eat.[p]The mini or small BGE really work well for this since the mushrooms are closer to the fire.[p]Hope this helps,

  • Thanks for the info guys, Wasn't going to make them until tomorrow but looking at them pictures I think I'll be making them shortly after I get a bottle of tequila!

  • Cream cheese + ________________. You can get as fancy as you like. Some I enjoy:[p]1) green onions. sprinkle bread crumbs on top that have been drizzled in olive oil.[p]2) crab, Krab (pollock), or salad shrimp[p]3) bacon (already cooked)[p]You want to pull them before they get too soft, about 15 minutes or so over a medium heat.[p]With regards to beer, I like New Castle Brown Ales when I've got a good steak.
