When you folks make tacos, do you buy mix and deep fry your shells, or do you just use a store bought tortilla shell or something similar?[p]If you use a tortilla shell, how do you get it to form into a taco shell shape with out frying it ... or do you just do a "soft shell" taco?[p]Many thanks for you input.

You can't use tortillas right from the store: they need to be cooked first. For soft tacos, heat a skillet or griddle and place tortillas on it, one at a time, flipping when the underside starts to soften. For crispy tortillas, place them in a deep fryer (or skillet with an inch of hot oil). I really don't know how long it will take for the tortilla to get crisp - seems like around 3 minutes. When that happens, remove the tortilla and fold it in half (or drape it over a form) before draining and cooling.[p]HTH[p]Ken

My favorite is fried but not quite crunchy. Heat oil in a pan and grab a corn tortilla on one side with tongs. Lower the tortilla into the oil until half of it is in the oil. Hold it there long enough to start to harden, then grab the hardened side folding it over and cook the other side holdig it open about an inch. Cool them on a rack or paper towels. You will have to experiment with the cooking times, there is a fine line between chewey and overly crisp. Store bought ones are way too crunchy and fall apart when you eat them. Try it, you will like. -RP
